Pide with minced beef, apricots and feta cheese

Ingredients

  • 1/2 cube (21 g) fresh yeast
  • 500 g Flour
  • 4 TABLESPOONS Olive oil
  • 7-10 Tbsp Salt
  • 75 g dried soft apricots
  • 1 red pepper
  • 2 TABLESPOONS Oil
  • 500 g Minced beef
  • 7-10 Tbsp Pepper
  • 7-10 Tbsp Cinnamon powder
  • 7-10 Tbsp ground cumin
  • 250 g Feta cheese
  • 2 stem(s) Mint
  • baking paper

Directions

    Crumble the yeast and dissolve in 250 ml of lukewarm water. Mix flour, olive oil and 1 pinch of salt. Add yeast and knead in a mixing bowl with the dough hooks of the hand mixer to a smooth dough. Cover and leave to rise in a warm place for about 45 minutes

    Cut the apricots into small pieces. Clean and wash the peppers and remove the core. Cut the bell peppers into narrow strips. Heat the oil in a pan and fry the minced meat until crumbly. Add paprika and fry again for about 2 minutes. Season with salt, pepper, cinnamon and cumin. Stir in the apricots and let it cool down a little

    Roll out the dough on a floured work surface to form a rectangle (35 x 45 cm), cut in half lengthwise and widthwise into 3 equal pieces. Place the dough strips on a baking tray lined with baking paper

    Spread the chopped mass in the middle of each dough strip as a strand. Fold the sides down about 1 cm. Fold up both long sides, so that the dough firmly encloses the chopping mass on the sides. Press both ends firmly together

    Crumble the feta and sprinkle it on the minced meat. Bake in a preheated oven (electric cooker: 200 °C/ convection oven: 175 °C/ gas: see manufacturer) for approx. 20 minutes. Wash mint, shake dry and cut into fine strips. Take out dumplings, sprinkle with mint and serve immediately
