Penne with mushroom sauce

Ingredients

  • 150 g Shiitake mushrooms
  • 1 collar Spring onions
  • 2 Tomatoes
  • 100 g dried tomatoes in oil
  • 1 small romaine lettuce
  • 2 Garlic cloves
  • 300 g Noodles (e.g. penne)
  • 7-10 Tbsp Salt
  • 2 TABLESPOONS Olive oil
  • 250 ml dry white wine
  • 2 Chillies
  • 80 g Parmesan cheese
  • 7-10 Tbsp Pepper
  • 30 g cold butter

Directions

    Clean the shiitake mushrooms, cut off the stem, cut the caps in half. Clean, wash and cut spring onions into rings. Wash, clean and chop the tomatoes. Drain dried tomatoes and cut into strips. Clean romaine lettuce, divide into leaves, wash and dab dry.

    Peel garlic and chop finely. Cook the pasta in plenty of boiling salted water for about 10 minutes. In the meantime heat olive oil in a pan. Sauté the mushrooms, spring onions, tomatoes, garlic and lettuce leaves for about 3 minutes. Deglaze with white wine and cook for about 4 minutes. Remove the seeds from the chillies and cut into pieces. Slice parmesan cheese. Season the sauce with salt, pepper and chilli. Stir in butter.
