Penne with feta cheese and rocket

Ingredients

Servings: 4
  • 350 g Noodles (e.g. penne)
  • 7-10 Tbsp Salt
  • 375 g Rocket
  • 60 g paprika-filled olives
  • 175 g Sheep's cheese
  • 2 Garlic cloves
  • 40 g Pine nuts
  • 4-5 Tbsp Olive oil
  • 7-10 Tbsp Pepper

Directions

    Put the penne in plenty of boiling salted water and cook for 12-15 minutes. In the meantime, clean and wash the rocket and let it drain well. Cut the rocket into strips, except for a few small leaves for garnishing. Drain olives and cut into slices. Cut the feta cheese into cubes.

    Peel garlic and press it through a garlic press. Roast pine nuts in a pan without fat and take them out. Put olive oil in the hot pan, add garlic, sheep's cheese, rocket and olives and braise briefly. Add drained pasta and pine nuts and season with pepper. Divide into 4 plates, sprinkle with remaining small rocket leaves and serve immediately
