Penne salad with white beans, feta and salsa

Ingredients

Servings: 4
  • 400 g Penne noodles
  • 7-10 Tbsp Salt
  • 400 g Tomatoes
  • 100 g Spring onions
  • 1 Pot of basil
  • 4-6 Tbsp Wine vinegar
  • 4 TABLESPOONS Olive oil
  • 7-10 Tbsp Pepper
  • 1 can(s) (425 ml) large white beans
  • 200 g Feta cheese

Directions

    Prepare the pasta in boiling salted water according to the instructions on the packet. For the salsa, wash tomatoes and cut them into fine cubes. Clean and wash spring onions and cut into fine rings.

    Wash basil, shake dry, pluck leaves from the stems and cut into strips. Mix tomato cubes, spring onion rings, basil, vinegar and oil. Season to taste with salt and pepper.

    Pour the beans into a sieve and rinse with cold water. Cut the cheese into cubes. Drain the pasta and put it in a bowl. Mix beans, salsa, cheese and noodles. Season to taste with salt, pepper and vinegar.
