Pecorino cheese meatballs with braised beans and vegetables

  • 1 Bread rolls from the previous day
  • 1 can(s) (425 ml, separation weight 250 g) broad white beans
  • 150 g Cutting beans
  • 100 g French beans
  • 2 Onions
  • 2 Garlic cloves
  • 1/2 bunch Thyme
  • 2 TABLESPOONS Olive oil
  • 1 can(s) (850 ml) peeled tomatoes
  • 200 ml Vegetable broth (instant)
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 500 g mixed minced meat
  • 1 Egg
  • 100 g Sheep's cheese
  • 20 g Butter or margarine

Directions

    Soak rolls in cold water. Drain white beans, rinse with cold water and drain well. Clean, wash and chop the string beans and French beans. Peel and finely dice onions and garlic. Pluck the thyme leaves from the stalks.

    Fry half of the onion, garlic and thyme leaves in hot oil. Pour in the canned tomatoes and stock and bring to the boil once. Add all the beans and braise over medium heat for 35-45 minutes. Season vegetables with salt and pepper. Squeeze the bread rolls vigorously. Knead minced meat, bread roll, egg and remaining onion cubes well. Season minced meat with salt and pepper. Form 8 meatballs from the minced meat mixture, placing a piece of feta cheese in the middle of each. Fry the meatballs in hot fat while turning for about 15 minutes.
