In the North German kitchen the stew pears, beans & bacon is a well-known classic, which tastes best in late summer and autumn.

Ingredients

Servings: 4
  • 2 Onions
  • 500 g Bacon
  • 7-10 Tbsp Salt
  • 1/2 TEASPOON black peppercorns
  • 1 kg green beans
  • 1 small bunch of savory
  • 4 small pears (e.g. mayor pears; approx. 125 g each)
  • 1 coated tablespoon of cornflour
  • 7-10 Tbsp Pepper
  • 7-10 Tbsp Kitchen yarn

Directions

    Onions peel and cut into slices. Add bacon and peppercorns to about 1 1/4 litre of lightly salted water. Bring to the boil and cook in a closed saucepan over medium heat for about 45 minutes.

    Clean and wash the beans, cut them into small pieces and add them to the bacon after 20-25 minutes. Wash the savory, dab dry, put something aside for garnishing. Tie the rest with kitchen string to a bunch.

    Wash the pears and add them with the savory to the beans about 15 minutes before the end of the cooking time. Remove the bacon, pears and savory. Cut bacon into pieces. Cut the pears in half lengthwise. Stir the starch in a little water until smooth, bind the simmering stock with it until slightly creamy, bring to the boil again.

    Season to taste with a little salt and pepper. Put the pears and bacon back in. Arrange on preheated plates and garnish pears, beans and bacon with the remaining savory.
