Pear and apple groats with vanilla curd

Ingredients

Servings: 4
  • 300 g sour apples
  • 300 g Pears
  • 250 ml apple juice
  • 75 g Sugar
  • 1 package Pudding powder "Vanilla Flavor"
  • 1 Vanilla pod
  • 250 g Edible quark (20 % fat in dry matter)
  • 1 package Cream stabiliser
  • 200 g Whipped cream

Directions

    Peel, quarter and core apples and pears. Dice the fruit. Boil up apple juice with fruit and 25 g sugar in a pot. Simmer covered for 5-7 minutes. Stir pudding powder with 6 tbsp. water until smooth. Remove from heat, stir in the pudding powder. Simmer for 1 minute while stirring. Let it cool down

    Cut the vanilla pod lengthwise and scrape out the pulp. Cut vanilla pod into strips and put aside. Mix quark with vanilla pulp and 25 g sugar until smooth. Mix cream firmer and 25 g sugar. Whip the cream until stiff, allow the cream firmer to trickle in. Fold the cream into the quark

    Layer the cream and compote alternately in 4 glasses (300 ml each). Decorate with vanilla pod strips and serve
