1 Melt the butter in a saucepan until it is golden brown and smells like hazelnut (hazelnut butter). Strain it and then add the honey
2 In a bowl, mix the flour, baking powder, icing sugar and powdered almonds. Add the egg whites one by one, then the butter/honey mixture. Cover and store in a cool place for at least 12 hours.
3 Preheat the oven to 180 °C (th 6). Divide the dough into slightly moist silicone financial moulds. Sprinkle the pistachios by pushing them a little. Bake for about 12 minutes. Turn out of the mold and let cool on a rack.
