Peach meringue cake

Ingredients

  • 170 g Butter or margarine
  • 150 g Sugar
  • 1 pinch Salt
  • 1 package Vanillin sugar
  • 5 Eggs (size M)
  • 250 g Flour
  • 1 TEASPOON Baking Powder
  • 2 TABLESPOONS Milk
  • 2 tin(s) (each 850 g) Peaches
  • 200 g Icing sugar
  • 70 g chopped almonds
  • 7-10 Tbsp Grease

Directions

    Cream fat, sugar, salt and vanilla sugar. Separate eggs. Gradually stir the egg yolks into the fat mass. Mix flour and baking powder and stir in. Stir in milk. Grease baking tray (approx. 33 x 38 cm). Spread the dough on the baking tray.

    Put the peach on a sieve and let it drip off. Beat the egg white until stiff, while letting the icing sugar trickle in. Place the peach halves on the dough with the curvature upwards. Spread the beaten egg white on top and sprinkle with almonds. Bake in the preheated oven (electric: 175 °C/ gas: level 2) for approx. 30 minutes. Let the cake cool down on a cake rack. Results in approx. 20 pieces
