Pea soup with sausage and toast

Ingredients

Servings: 7
  • 2 Onions
  • 1 Carrot
  • 4 (approx. 300 g) large potatoes
  • 250 g streaky smoked bacon
  • 500 g dried peas
  • 500 g Pork sausage
  • 4 discs Fine Bread
  • 2-3 TABLESPOONS Butter
  • 200 g Whipped cream
  • 1-2 TEASPOONS Horseradish (glass)
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 1 collar Parsley

Directions

    Peel and chop 1 onion. Peel, wash and chop the carrot and potatoes

    Briefly fry 2 bacon in a large pan. Fry the diced onion, potatoes and carrot briefly. Rinse peas and add 2 l water. Bring everything to the boil. Simmer covered for about 11/2 hours. Remove bacon after 1 hour

    Dice sausage, bread and 1 onion and fry in hot butter in portions for 4-6 minutes. Take out

    Whip the cream until semi-stiff. Stir in horseradish. Dice bacon and add to the soup. Season to taste with salt and pepper. Wash and chop parsley. Arrange soup with creamed horseradish, bread mixture and parsley
