Pea soup with bacon and sausages

Ingredients

Servings: 4
  • 500 g dried green peas
  • 7-10 Tbsp Salt
  • 250 g streaky smoked bacon
  • 1 bunch of greens
  • 4 Bock sausages (approx. 100 g each)
  • 7-10 Tbsp Pepper
  • 1/2 bunch Parsley

Directions

    Wash the peas and boil them in 2 litres of salted water. Add bacon and cook covered for about 1 hour. Clean, wash and finely chop the soup greens and add to the peas. Stir from time to time.

    Add the sausages to the pea soup 5 minutes before the end of the cooking time and heat up as well. Remove bacon, cut off rind. Cut bacon into strips. Remove the sausages and cut in half. Season soup with salt and pepper.

    Pea soup with the bacon and the sausages in a terrine. Wash the parsley, chop finely and sprinkle over the soup, except for something to garnish. Garnish with parsley and serve.
