Pea and ham rice with fried egg

Ingredients

Servings: 4
  • 200 g frozen peas
  • 150 g Long grain rice
  • 7-10 Tbsp Salt
  • 1 red onion
  • 1 package (200 g) low-fat cooked ham
  • 2 TABLESPOONS Olive oil
  • 4 Eggs (size M)
  • 7-10 Tbsp Pepper
  • some stem(s) Parsley

Directions

    Remove peas from the freezer. Prepare rice in boiling salted water according to package instructions. Peel onion and cut into fine rings. Cut ham into cubes.

    Heat 1 tablespoon of oil in a frying pan. Fry the onion for about 3 minutes while turning. Add ham and peas and fry for 2-3 minutes. In the meantime heat 1 tbsp. oil in a second large pan.

    Fry the eggs in it at medium heat for about 3 minutes until they become fried eggs. Season with salt and pepper.

    Drain the rice, place in a bowl and mix with the ham mixture. Season to taste with salt and pepper. Wash parsley, shake dry. Pluck off leaves and chop finely, except for something to garnish.

    Fold chopped parsley into the rice mixture and arrange on plates. Place 1 fried egg on each plate and garnish with parsley.
