Pasta with thyme chanterelles and bacon

Ingredients

  • 400 g green beans
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 300 g Chanterelles
  • 2 Onions
  • 400 g Noodles (e.g. penne)
  • 100 g Breakfast bacon in thin slices (Bacon)
  • 5 TABLESPOONS Olive oil
  • 1 TEASPOON dried thyme
  • 5 TABLESPOONS Balsamic vinegar

Directions

    Clean and wash the beans and cut or break them into pieces. Cover and cook in plenty of boiling salted water for about 18 minutes.

    In the meantime clean the chanterelles, wash them briefly if necessary and pat them dry well. Peel and finely chop the onions.

    Cook the pasta in plenty of boiling salted water according to the instructions on the packet. Fry bacon in a pan without fat until crispy. Take out and let drain on kitchen paper.

    Heat the oil in the bacon fat. Add the chanterelles and fry well while turning. Fry the onions briefly. Season with salt, pepper and thyme. Deglaze with vinegar, bring to the boil briefly.

    Take 150 ml of the pasta water. Deglaze chanterelles with it and bring to the boil. Drain the pasta, let it drain and put it back into the pot. Drain the beans. Mix chanterelles with sauce and beans with the noodles.

    Season to taste with salt and pepper. Arrange everything. Crumble the bacon, sprinkle over it.
