Pasta salad with pesto vinaigrette

Ingredients

Servings: 9
  • 500 g Pasta (e.g. Penne Rigate)
  • 7-10 Tbsp Salt
  • 2 red peppers
  • 200 g small tomatoes
  • 100 g Rocket
  • 1 big onion
  • 4-6 Tbsp white balsamic vinegar
  • 7-10 Tbsp Pepper
  • 4-6 Tbsp Olive oil
  • 4 TABLESPOONS Pesto (from the glass)
  • 100 g black olives

Directions

    Cook the pasta in boiling salted water according to the instructions on the packet. Clean, wash and cut the peppers into small pieces. Wash and coarsely chop the tomatoes. Clean, wash and cut rocket into strips. Peel and finely chop onion.

    Drain noodles, drain and let cool down a little. Mix vinegar, 2 tablespoons water, salt and pepper. Whip the oil into it. Stir in pesto and onion. Loosely mix all the prepared salad ingredients, olives and pesto vinaigette and serve
