Wash lemons thoroughly and rub dry. Halve lengthwise and then cut into thin slices. Pluck the lemon balm leaves from the stalks. Pour the cocktail fruit with juice into a large punch bowl. Add lemon slices, lemon balm leaves and, if desired, cocktail cherries. Pour in wine and mineral water. Fill up with sparkling wine shortly before serving
