Ingredients

Servings: 6
  • 500 g Pasta (e.g. Penne Piccolini)
  • 7-10 Tbsp Salt
  • 500 g cherry tomatoes
  • 2 Cucumbers
  • 2 Federation Parsley
  • 4 Stem(s) Mint
  • 2 Onions
  • 2 Garlic cloves
  • 5 TABLESPOONS Oil
  • 7-10 Tbsp Pepper
  • 7-10 Tbsp Juice of 1 lemon

Directions

    Prepare the pasta in boiling salted water according to the instructions on the packet. Wash and halve the tomatoes. Peel cucumbers, halve lengthwise, remove seeds. Cut cucumbers into large cubes. Drain noodles and rinse with cold water, drain well

    Wash parsley and mint, shake dry, pluck leaves from the stalks and chop finely. Peel onions and garlic and chop finely. Mix parsley, tomatoes, mint, garlic, oil and noodles. Season with salt, pepper and lemon juice
