Parsley salad with croutons

Ingredients

Servings: 4
  • 4-5 Tomatoes (approx. 300 g)
  • 2-3 Federation Parsley
  • 7-10 Tbsp (preferably smooth)
  • 3-4 Tbsp Lemon juice
  • 7-10 Tbsp salt, pepper, some sugar
  • 4-5 Tbsp Oil (e.g. olive oil)
  • 1 Garlic clove
  • 3 discs Toast
  • 7-10 Tbsp Lemon

Directions

    Wash, clean, halve, seed and finely dice the tomatoes. Wash parsley, shake dry and chop roughly

    Mix lemon juice, salt, pepper and sugar. Fold in 3-4 tablespoons of oil. Mix with parsley and tomatoes and let it stand for a while

    Peel and chop the garlic. Cut bread into rhombs or cubes. Fry in 1 tbsp. hot oil until golden brown all around. Fry garlic briefly. Sprinkle everything over the salad. Garnish with lemon wedges
