Clean, wash and cut the salad into strips. Peel and halve the papaya, scrape out the seeds and cut the flesh into slices. Arrange salad and papaya on plates.
Wash the lemon. Grate half of the peel into fine strips. Squeeze the juice. Mix lemon juice and zest, salt, pepper, sugar and oil. Pour marinade over the salad. Remove the crusts from the toast and dice.
Peel and finely chop the garlic. Heat the fat. Fry the chopped garlic and bread cubes until golden brown. Leave to cool and pour over the salad.
