Pancakes with apple rings and cinnamon

Ingredients

Servings: 8
  • 4 Eggs (size M)
  • 1 pinch Salt
  • 25 g Sugar
  • 1/2 l Milk
  • 200 g Flour
  • 1 package Pudding powder "Vanilla Flavor"
  • 1/2 TEASPOON Baking Powder
  • 3 Apples (approx. 175 g each)
  • 1-2 TABLESPOONS Lemon juice
  • 40 g clarified butter

Directions

    Separate eggs. Whisk the egg yolks, salt and sugar briefly with the whisk of the hand mixer. Stir in milk. Add flour, pudding powder and baking powder and whisk smooth with the whisks of the hand mixer.

    Let the dough rest for about 15 minutes. In the meantime wash the apples, cut out the core with an apple corer. Cut apples into about 8 slices each. Sprinkle with lemon juice. Beat the egg white until stiff and fold into the dough in portions.

    Heat clarified butter in portions in a pan (21 cm Ø at the top and 16 cm Ø at the bottom). Add approx. 2 ladles of dough, place 3 apple rings on top and bake at medium heat for approx. 2 minutes on each side.

    (Depending on the oven and pan, the baking time may vary, so bake from both sides until golden yellow). Keep warm. Process remaining dough and apple rings in the same way. Cinnamon and sugar taste good with it.
