Mushroom scrambled eggs with truffle butter

  • 100 g Mushrooms
  • 1 TABLESPOON clarified butter
  • 8 Eggs (size M)
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 1 TABLESPOON Truffle butter
  • 7-10 Tbsp Tarragon

Directions

    Clean, wash and slice the mushrooms. Heat clarified butter in a pan. Sauté the mushrooms for about 4 minutes while turning. Whisk eggs, season with salt and pepper.

    Add the egg mixture and truffle butter to the mushrooms in the pan and push them together at medium heat with a spatula until the egg has set. Arrange the scrambled eggs in glasses and garnish with tarragon.
