Overturned flummerite with exotic fruits

Ingredients

  • 2 Eggs
  • 1/2 l Milk
  • 2 TABLESPOONS Sugar
  • 1 package Vanillin sugar
  • 7-10 Tbsp grated rind of 1 untreated lemon
  • 75 g Semolina
  • 1 pinch Salt
  • 2 Kiwis
  • 2 ripe mangoes
  • 7-10 Tbsp Melissa

Directions

    Separate eggs. Whisk egg yolk and 4 tablespoons of milk. Bring the rest of the milk, sugar, vanillin sugar and lemon zest to the boil briefly. Sprinkle semolina over low heat while stirring constantly.

    Leave to soak for about 10 minutes. Meanwhile beat egg white and salt until stiff. Stir the whisked egg yolk into the semolina. Carefully fold in the beaten egg white. Pour everything into cold rinsed moulds (approx. 200 ml content).

    Leave to set in the refrigerator for about 2 hours. Peel kiwis and cut into slices. Wash and peel the mangos. Cut the flesh into strips from the stone. Put something aside for decoration. Put the rest into a high mixing bowl and puree with a chopping stick.

    Turn dessert onto plates. Arrange kiwi slices, mango slices and mango puree around it. Serve decorated with melissa.
