Oven hangover with vanilla sauce

Ingredients

  • 1/2 cube (21 g) fresh yeast
  • 100 g Sugar
  • 375 g Milk
  • 250 g Flour
  • 1 knife tip Salt
  • 3 Eggs (size M)
  • 3 Pears (e.g. trout)
  • 2-3 TABLESPOONS Lemon juice
  • 50 g flaked almonds
  • 50 g Butter
  • 1 TABLESPOON Cornstarch
  • 1 package Bourbon vanilla sugar
  • 150 g Whipped cream
  • 2 Egg yolk (size M)
  • 7-10 Tbsp Grease

Directions

    Stir yeast and 25 g sugar until the yeast becomes liquid. Heat 125 ml milk lukewarm. Put flour, salt and eggs in a bowl. Add milk and yeast, knead everything with the dough hooks of the hand mixer to a smooth dough. Cover and leave to rise in a warm place for about 1 hour. Peel, halve and core the pears.

    Cut into the bulb of the pears, sprinkle with lemon juice. Grease an ovenproof dish (approx. 22 cm Ø; 2 litres capacity). Knead the dough once more, put it into the baking dish and smooth it down. Put pears on top. Mix almonds, 50 g sugar, sprinkle pears and dough. Put butter in flakes on top. Let it rest for 10 minutes. Bake in the preheated oven (electric cooker: 200 °C/ convection oven: 175 °C/ gas: level 3) for 40-45 minutes until golden brown. For the vanilla sauce, stir the starch and 100 ml milk until smooth. Put 25 g sugar, vanilla sugar, cream and 150 ml milk in a saucepan. Bring to the boil and remove from the heat.

    Put butter in flakes on top. Let it rest for 10 minutes. Bake in the preheated oven (electric cooker: 200 °C/ convection oven: 175 °C/ gas: level 3) for 40-45 minutes until golden brown. For the vanilla sauce, stir the starch and 100 ml milk until smooth. Put 25 g sugar, vanilla sugar, cream and 150 ml milk in a saucepan. Bring to the boil and remove from the heat. Stir in the starch and let it simmer for about 1 minute while stirring. Pull off the stove. Mix egg yolks with some hot vanilla milk. Stir egg yolks into the remaining milk. Serve vanilla sauce warm or cold with the oven hangover
