Wash the carrot, pat dry well and grate finely on a kitchen grater. Cream fat in pieces, fructose and salt. Then add flour, nuts, carrot and orange peel. Use the dough hook of the hand mixer to make a smooth dough. Cover and chill for approx. 1 hour
Roll out the dough on a little flour to a thickness of 4-5 mm. Cut out about 30 cookies from it
(e.g. fir trees: 7 cm high, and animals: 7 cm long) Place on a baking tray lined with baking paper
Whisk the egg yolk and spread a thin layer on the cookies. Bake in the preheated oven (electric cooker: 175 °C/ convection oven: 150 °C / gas: level 2) for 12-15 minutes. Let them cool down on a cake rack
