  • 300 g Baguette bread
  • 125 g Onions
  • 75 g streaky smoked bacon
  • 1/2 potty fresh thyme
  • 1 collar Parsley
  • 2 TABLESPOONS Oil
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 1 (approx. 4.5 kg) ready-to-cook goose with offal
  • 3 Eggs (size M)
  • 1/2 l clear chicken stock (instant)
  • 1/4 l dry red wine
  • 1 TABLESPOON Tomato paste
  • 375 g small, round shallots
  • 1 Garlic clove
  • 500 g white mushrooms
  • 1 kg green beans or 600 g princess beans
  • 12-18 discs Bacon
  • 15 g Butter or margarine
  • 1 glass (400 ml) Goose stock
  • 4 TABLESPOONS dark sauce thickener
  • 1 TABLESPOON Fresh cream
  • 7-10 Tbsp wooden skewers and kitchen yarn
