Fillet of beef with mulled wine and pepper sauce with beans and rösti

Ingredients

  • 2 TABLESPOONS clarified butter
  • 750 g Fillet of beef (middle piece)
  • 7-10 Tbsp salt, pepper
  • 7-10 Tbsp Nutmeg
  • 600 g Potatoes
  • 1 Onion
  • 1 Carrot
  • 200 ml Mulled wine
  • 200 ml Beef stock (glass)
  • 2 TEASPOONS pickled green peppercorns (glass)
  • 2 coated Tsp Cornstarch
  • 400 g Princess beans
  • 6 discs Bacon
  • 2 Eggs (Gr. M)
  • 50 g Flour
  • 4 TABLESPOONS Oil
  • 1-2 TABLESPOONS Butter
  • 7-10 Tbsp Aluminium foil

Directions

    Preheat the oven for the beef fillet (electric stove: 100 °C/circulating air: not suitable/gas: see manufacturer). Heat lard in a pan. Dab fillet dry. Brown well all around. Season with salt and pepper.

    Place on a baking tray or in a roaster. Cook in a hot oven for about 1 1⁄2 hours. Put the pan with the fat aside.

    For the Rösti, wash the potatoes and cook covered in water for about 20 minutes. Drain the potatoes, rinse with cold water and remove the skin. Let the potatoes cool down.

    For the sauce, peel the onion. Peel and wash the carrot. Cut both into small pieces. Heat frying fat in a pan and fry vegetables in it. Add wine and stock. Reduce the liquid for 20-30 minutes to approx. 1⁄4 l.

    Pour through a sieve into a pot. Add peppercorns. Stir starch with 3 tablespoons of cold water until smooth. Stir into the boiling sauce and simmer for about 2 minutes.

    For the bacon beans, wash and clean the beans and cook in boiling salted water for 12-15 minutes. Halve the bacon slices. Drain the beans, rinse with cold water and bundle into about 12 small packets. Wrap 1 slice of bacon around each package.

    Coarsely grate the cooled potatoes. Whisk the eggs and knead them into the potatoes with flour, a little salt, pepper and nutmeg. Fry 4 Rösti in total. Heat up about 1 tablespoon of oil in a pan (approx. 16 cm Ø).

    Approximately 1⁄4 Add the potato mixture and press flat. Fry over medium heat for 4-5 minutes. Turn carefully, fry for another 4-5 minutes. Keep warm in the oven and roast 3 more Rösti in the same way.

    Take out the fillet of beef, wrap in aluminium foil and let it rest for about 5 minutes. Heat butter in a pan. Fry the bacon beans in it while turning until the bacon is crispy. Take the beef fillet out of the foil and cut into slices.

    Pour the meat juice into the mulled wine sauce. Bring to the boil again, season with salt and pepper. Arrange fillet, sauce and beans. Serve with Rösti.
