Ingredients

Servings: 4
  • 1 chicken ready to roast (approx. 1.2 kg)
  • 7-10 Tbsp Salt
  • 7-10 Tbsp white pepper
  • 1/2 TEASPOON dried thyme
  • 2 TABLESPOONS Orange marmalade
  • 3 Oranges
  • 1 TEASPOON Chicken broth (instant)
  • 750 g Broccoli
  • 2 TABLESPOONS Walnut kernels
  • 1 TABLESPOON butter/margarine
  • 3 TABLESPOONS dark sauce thickener
  • 7-10 Tbsp Herbs

Directions

    Chicken wash. Season inside and out with salt, pepper and thyme. Place in a roasting pan

    Roast the chicken in the preheated oven (electric cooker: 200 °C / convection oven: 175 °C/ gas: level 3) for approx. 1 1/4 hours. After approx. 30 minutes roasting time, coat the chicken with orange marmalade

    Peel 1 orange with the white skin, then cut into slices and halve. Squeeze 2 oranges. Dissolve the stock in 1/4 l hot water. Pour the juice and stock onto the chicken after about 45 minutes

    Clean and wash broccoli and cut into florets. Cook in salt water for about 6 minutes. Chop the nuts and roast them in fat. Add orange slices and fry briefly. Drain broccoli

    Take out the chicken. Bring the stock to the boil, thicken and season to taste. Arrange chicken with broccoli and oranges, garnish. Serve with extra sauce. Serve with: potatoes
