Onion steaks with fried potatoes

Ingredients

Servings: 4
  • 1 kg waxy potatoes
  • 400 g Onions
  • 400 g small mushrooms
  • 1/2 bunch Parsley
  • 7-8 TABLESPOONS clarified butter
  • 7-10 Tbsp salt, pepper
  • 4 Rump steaks (approx. 200 g each)
  • 4 TSP Fresh cream
  • 7-10 Tbsp Aluminium foil

Directions

    Wash the potatoes and cook covered for about 20 minutes. quench, peel and let cool down

    Peel the onions. Dice 1 onion, cut the rest into rings. Clean and wash the mushrooms. Wash and finely chop the parsley. Cut potatoes into slices

    Heat 1-2 tablespoons of clarified butter in a large frying pan. Fry the mushrooms for 5-6 minutes

    Heat 3 tablespoons of clarified butter in a 2nd large pan. Fry the potatoes for 8-10 minutes, turning occasionally. Fry the onion cubes for about 3 minutes. Season fried potatoes, keep warm

    Stir half the parsley into the mushrooms. Season and keep warm. Heat 1 tbsp. clarified butter in the frying fat. Fry the onion rings briefly in it, take them out

    Pat the steaks dry. Cut the fat edge several times. Heat 2 tbsp. clarified butter in the frying fat. Fry the steaks for 3-4 minutes on each side, season. If necessary, wrap in aluminium foil and leave to rest briefly

    Fry the onion rings in hot frying fat until crispy brown, turning, and season. Arrange everything with crème fraîche, sprinkle with the rest of the parsley

    Drink: cold beer
