Ingredients

  • 300 g Flour
  • 7-10 Tbsp Salt
  • 5 Eggs (size M)
  • 150 g Lard
  • 150 g streaky smoked bacon
  • 750 g Onions
  • 2 TABLESPOONS Oil
  • 7-10 Tbsp black pepper
  • 300 g ripened cream
  • 7-10 Tbsp grated nutmeg
  • 7-10 Tbsp Grease
  • 7-10 Tbsp Flour

Directions

    Put the flour in a bowl. Add 1 pinch of salt, 1 egg and lard. Work into a smooth dough with the dough hooks of the hand mixer. If necessary add 2-3 tablespoons of cold water and knead in. Cover and chill for about 30 minutes. Cut bacon into cubes.

    Peel and roughly dice onions. Heat the oil in a large pan and fry the bacon. Add onions and fry for 5-8 minutes at medium heat until translucent. Season with salt and pepper, let cool down. Whisk sour cream with 4 eggs, season with salt, pepper and nutmeg. Grease a round dish (tart or pizza dish; bottom 26 cm Ø, top 28 cm Ø). Roll out the dough on a floured work surface (approx. 30 cm Ø). Carefully put the dough into the form, press it down, cut off any protruding edges. Spread the onion mixture in the tin. Pour the egg-cream mixture evenly over it. Bake in the preheated oven (electric cooker: 200 °C/ convection oven: 175 °C/ gas: level 3) for 40-45 minutes.

    Grease a round dish (tart or pizza dish; bottom 26 cm Ø, top 28 cm Ø). Roll out the dough on a floured work surface (approx. 30 cm Ø). Carefully put the dough into the form, press it down, cut off any protruding edges. Spread the onion mixture in the tin. Pour the egg-cream mixture evenly over it. Bake in the preheated oven (electric cooker: 200 °C/ convection oven: 175 °C/ gas: level 3) for 40-45 minutes. Serve still warm. Served with Federweisser
