Nut-Striezel with cranberries

Ingredients

  • 100 g dried cranberries
  • 5 TABLESPOONS apple juice
  • 1/4 l + 2 tablespoons of milk
  • 500 g Flour
  • 1 cube (42 g) Yeast
  • 2 TABLESPOONS + 50 g sugar
  • 50 g Butter
  • 1 package Vanillin sugar
  • 2 Eggs (size M)
  • 7-10 Tbsp Salt
  • 100 g unsalted pecans
  • 2 (approx. 250 g) Apples
  • 2 TABLESPOONS Currant Jelly
  • 3 TABLESPOONS Honey
  • 7-10 Tbsp Flour
  • baking paper

Directions

    Soak cranberries in apple juice. Warm up 1/4 litre of milk. Put the flour in a bowl and press a depression in the middle. Crumble the yeast into the milk, dissolve it while stirring and pour it into the hollow. Mix with 2 tablespoons of sugar and some flour from the rim to the pre-dough. Cover and leave to rise for about 30 minutes. Melt butter.

    Let it cool down. Add 50 g sugar, vanillin sugar, 1 egg, 1 pinch of salt and butter to the pre-dough and work into a smooth dough, first with the dough hooks of the hand mixer, then with your hands. Cover and let rise for about 30 minutes. Line a baking tray (approx. 35 x 40 cm) with baking paper. Coarsely chop the nuts and roast them in a pan without fat, remove. Separate 1 egg. Put the egg yolk in a cool place. Wash apples, grate dry and dice finely. Mix apple cubes, cranberries, jelly, honey, nuts and egg white. Roll out the dough on a little flour rectangularly (approx. 35 x 45 cm). Spread the cranberry mixture on the dough, leaving about 2 cm free all around. Roll up from the long side. Cut the roll in half lengthwise.

    Put the egg yolk in a cool place. Wash apples, grate dry and dice finely. Mix apple cubes, cranberries, jelly, honey, nuts and egg white. Roll out the dough on a little flour rectangularly (approx. 35 x 45 cm). Spread the cranberry mixture on the dough, leaving about 2 cm free all around. Roll up from the long side. Cut the roll in half lengthwise. Turn both rolls to the cord. Put them on the baking tray and let them rise again for about 15 minutes. Whisk the egg yolk and 2 tablespoons of milk. Spread the cord with it. Bake in the preheated oven (electric cooker: 200 °C/ convection oven: 175 °C/ gas: level 3) for 35-40 minutes. Let it cool down, cut into slices

    Turn both rolls to the cord. Put them on the baking tray and let them rise again for about 15 minutes. Whisk the egg yolk and 2 tablespoons of milk. Spread the cord with it. Bake in the preheated oven (electric cooker: 200 °C/ convection oven: 175 °C/ gas: level 3) for 35-40 minutes. Let it cool down, cut into slices
