Noodles with salmon-lentil sauce

Ingredients

  • 100 g green lentils ("Du Puy")
  • 7-10 Tbsp Salt
  • 2 Shallots
  • 20 g Butter or margarine
  • 200 g Whipped cream
  • 1/8 l Milk
  • 2-3 TABLESPOONS Lemon juice
  • 1-2 TABLESPOONS sauce thickener
  • 7-10 Tbsp white pepper
  • 400 g Loop noodles
  • 125 g smoked salmon
  • 7-10 Tbsp Dill and lemon slices

Directions

    Soak lentils in cold water for about 30 minutes. Pour lentils onto a sieve, drain and cook in 1/4 litre of boiling salted water for about 20 minutes. Peel and finely dice the shallots. Heat the fat in a saucepan. Sauté the shallots for 1 minute. Add cream, milk and lemon juice and bring to the boil. Stir in sauce thickener, bring to the boil again.

    Season to taste with salt and pepper. Cook the pasta in plenty of boiling salted water for about 10 minutes. Cut salmon into fine strips. Pour lentils and noodles on a sieve and drain. Arrange noodles, lentils, sauce and salmon on plates. Serve garnished with dill and lemon slices
