Noodles with pork schnitzel and peanuts

Ingredients

  • 75 g ribbon noodles (e.g. linguini)
  • 7-10 Tbsp Salt
  • 2 Carrots
  • 1 Onion
  • 1 Garlic clove
  • 50 g Sweet peas
  • 100 g Pork escalope
  • 1 TEASPOON Oil
  • 7-10 Tbsp Pepper
  • 1 TABLESPOON Sesame paste (Tahini)
  • 1/2 TABLESPOON Peanut Butter
  • 7-10 Tbsp Sugar
  • 2-3 TEASPOONS Lemon juice
  • 4-5 Stem(s) Coriander
  • 1 TABLESPOON roasted salted peanuts
  • 2–3 small leaves of lettuce to serve

Directions

    Cook the pasta in boiling salted water according to the instructions on the packet. Peel carrots and cut into thin strips. Peel and chop onion and garlic. Wash the pods, dab dry and cut into three diagonally. Dab meat dry and cut into strips.

    Heat the oil in a frying pan. Fry the meat for 3-4 minutes while turning, season with a little salt and pepper. Add carrots and pods and fry for 2-3 minutes, turning. Drain the noodles, collect the noodle water. Drain noodles. Mix 100 ml pasta water, sesame paste and peanut butter, add to the meat, bring to the boil. Season the sauce with a little sugar and lemon juice, add the noodles, mix, dilute with additional noodle water if necessary

    Wash the coriander, shake dry and cut coarsely. Chop the peanuts. Arrange noodles on some lettuce leaves in a bowl, sprinkle with coriander and peanuts
