Noodles with mushrooms and meatballs

Ingredients

  • 1 small onion
  • 80 g Minced beef
  • 1 tablespoon (15 g) Low-fat curd
  • 1-2 TEASPOONS Breadcrumbs
  • 7-10 Tbsp Salt
  • 7-10 Tbsp black pepper
  • 7-10 Tbsp Sweet peppers
  • 1 Stalk leek (leek)
  • 50 g Mushrooms
  • 50 g Noodles (without egg; e.g. spiral noodles)
  • 1 tsp (5 g) Oil
  • 6 TABLESPOONS Vegetable broth
  • 6 TABLESPOONS milk (1,5 % fat)
  • 1-2 TEASPOONS sauce thickener
  • 1 small tomato

Directions

    Peel and finely chop the onion. Knead with minced meat, quark and breadcrumbs. Season with salt, pepper and paprika. Form small balls from the mixture

    Clean and wash the leek and mushrooms. Cut the leek into rings, halve the mushrooms if necessary. Cook the pasta in plenty of boiling salted water for about 10 minutes

    Fry the meatballs in hot oil until brown all around, take them out. Fry the leek and mushrooms in the frying fat. Deglaze with stock and milk, bring to the boil and thicken. Season to taste

    Clean, wash, seed and dice the tomato. Heat meatballs in the sauce. Serve with the noodles. Sprinkle tomato cubes on top

    If you want to increase the fibre content: use wholemeal pasta
