Noodles in mushroom sauce

Ingredients

Servings: 4
  • 10 g dried porcini
  • 320 g Pasta (for example: Ricciarelle)
  • 7-10 Tbsp Salt
  • 300 g Mushrooms
  • 40 g streaky bacon
  • 2 Shallots
  • 2-3 TABLESPOONS Olive oil
  • 7-10 Tbsp Pepper
  • 75 ml dry white wine
  • 100 g Whipped cream
  • 150 g Fresh cream
  • 7-10 Tbsp a few squirts of lemon juice
  • 2 stem(s) flat leaf parsley

Directions

    Soak the porcini in 200 ml water. Prepare pasta in boiling salted water according to package instructions. In the meantime clean and clean the mushrooms and cut them into fine strips. Finely dice bacon.

    Peel the shallots and cut into slices. Heat the oil. Fry bacon and shallots for 1-2 minutes. Add mushrooms, fry for another 4 minutes, season with salt and pepper. Add porcini mushrooms with soaking water and white wine, boil down for 3 minutes at high heat.

    Stir in cream and crème fraiche, simmer for 2 minutes. Season to taste with salt, pepper and lemon juice. Wash parsley, cut leaves into fine strips. Arrange noodles and sauce sprinkled with parsley on plates.
