Clean the salad, wash and drain well. Wash nectarines, cut in half and remove stone. Cut the flesh into slices. Drain mozzarella.
Heat butter in a frying pan. Briefly fry the nectarines on each side. Sprinkle with sugar and lightly caramelise. Remove the nectarines from the pan. Add balsamic vinegar and bring to the boil.
Season to taste with salt, pepper and sugar. Leave to cool.
Arrange salad, mozzarella and nectarines mixed on plates. Drizzle with dressing. Serve with baguette.
