Nectarine-Mango-Ginger Jam

Ingredients

  • 8 ripe nectarines (about 125 g each)
  • 1 (about 550 g) ripe mango
  • 1 piece(s) (approx. 50 g) Ginger
  • 7-10 Tbsp juice of 2 lemons (about 100 ml)
  • 1 package (500 g) Gelling sugar (2:1)
  • 1 Cinnamon stick

Directions

    Wash nectarines, cut skin crosswise. Place in boiling water for about 2 minutes. Remove, rinse with cold water and peel off skin. Halve nectarines, remove stones.

    Cut the flesh into small pieces. Peel mango, cut flesh from stone and chop. (It should give 1200 g of flesh). Peel ginger, grate finely and put it in a large pot with fruit and lemon juice. Puree everything finely

    Stir in gelling sugar. Break the cinnamon stick once and add it. Let it stand for about 30 minutes, stirring from time to time. Bring everything to the boil while stirring and let it boil for about 6 minutes (gelling test!). Take out the cinnamon stick. Immediately fill into clean, dry twist-off jars, close them and put them on the lid for about 5 minutes. Turn over again and let it cool down
