Mushrooms in tomato vinaigrette

Ingredients

Servings: 4
  • 1/2 bunch Parsley
  • 4-5 Tbsp Balsamic vinegar
  • 7-10 Tbsp salt, pepper, sugar
  • 3 TABLESPOONS Olive oil
  • 250 g Mushrooms
  • 2 medium-sized tomatoes
  • 7-10 Tbsp some salad leaves

Directions

    Wash and chop the parsley. Mix with vinegar, salt, pepper and 1 pinch of sugar. Gradually add the oil.

    Clean and wash the mushrooms and cut or slice them thinly. Drizzle marinade over them. Cover and leave to stand for approx. 30 minutes

    Wash, quarter and seed the tomatoes. Finely dice the flesh. Wash lettuce leaves, shake dry and pluck smaller

    Arrange the salad leaves on plates. Arrange mushrooms with marinade on top and sprinkle with the tomato cubes

    The marinated mushrooms can also be sprinkled with crispy fried diced bacon and slices of garlic

  6. 6

    Very fine and even mushroom slices can be easily sliced with a vegetable slicer
