Mulled wine cranberries

Ingredients

  • 500 ml Red wine
  • 300 g Cane sugar
  • 4 Cinnamon sticks
  • 2 Vanilla beans
  • 6-8 Star Anise
  • 6 Carnations
  • 750 g fresh cranberries
  • 100 g Walnuts (e.g. from California)

Directions

    Heat red wine with cane sugar, cinnamon, chopped vanilla beans, star anise and cloves in a pot. Heat while stirring until the sugar is dissolved.

    Spread the cranberries and walnuts on the preserving jars (e.g. from Weck with rubber rings and clips or parfait jars), pouring the red wine stock with the spices. Close the jars.

    Fill a roaster or the juice pan of the oven about two fingers wide with boiling water. Place glasses inside. Boil down at 175 degrees (gas: level 2-3, circulating air: not suitable for boiling down with rubber rings) until bubbles rise in the glasses (approx. 35-45 minutes).

    Switch off the oven and leave the glasses in a hot water bath for about 30 minutes.

    Keeps unopened for 3-4 months, opened consume within 1 week and keep cool.

    Tip: If you like, add a shot glass of brown rum to each glass. The mulled wine cranberries are an ideal gift. They go well with ice cream, baked apples or panna cotta. Especially delicious if you warm up the mulled wine cranberries briefly before serving.
