Halloumi with apricot and spinach salad

Ingredients

Servings: 6
  • 125 g young spinach
  • 50 g roasted salted peanuts
  • 4 TABLESPOONS Lemon juice
  • 1 TABLESPOON liquid honey
  • 7-10 Tbsp salt, pepper
  • 2 TABLESPOONS Sesame Oil
  • 4 TABLESPOONS Olive oil
  • 500 g Apricots
  • 4 Stem(s) Coriander
  • 3 packs (250 g each) Halloumi
  • 6 TABLESPOONS Sunshine-Chili sauce
  • 2 TABLESPOONS Roasted onions

Directions

    For the salad, select the spinach, wash and drain. Coarsely chop the peanuts. Mix lemon juice, honey, salt and pepper. Add sesame oil and 2 tbsp. olive oil. Wash, halve, stone and slice the apricots.

    Mix apricots, peanuts and lemon vinaigrette.

    Wash the coriander, shake dry and pluck off the leaves. Halve Halloumi horizontally and spread a thin layer of 2 tablespoons of olive oil on all sides. Grill on the hot grill for about 3 minutes on each side.

    Fold the spinach under the marinated apricots. Spread grilled halloumi with chilli sauce. Sprinkle with coriander and fried onions. Eat salad with it.
