Minute steaks with fried egg, tomatoes and croquettes

Ingredients

Servings: 4
  • 1 pack of (450 ml) frozen croquettes
  • 800 g cherry tomatoes
  • 1 Onion
  • 3 TABLESPOONS Sunflower oil
  • 8 Minute steaks (approx. 80 g each)
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 150 ml Vegetable broth
  • 2 TABLESPOONS Balsamic Vinegar
  • 1 TABLESPOON Butter or margarine
  • 7-10 Tbsp Sweet peppers
  • 4 Eggs
  • baking paper

Directions

    Place the croquettes on a baking tray lined with baking paper and prepare according to the package instructions

    Wash and halve the tomatoes. Peel and finely chop the onion. Dab steaks dry and season with salt. Heat oil in 2 large pans. Fry the steaks for about 4 minutes while turning. Season with pepper. Take out finished steaks and keep warm

    In a pan, fry the onion cubes in the frying fat for about 5 minutes until translucent. After about 3 minutes add tomatoes. Deglaze with stock, bring to the boil, season to taste with salt, pepper and vinegar. Meanwhile melt the fat in the second pan, beat the eggs in it and fry them. Season with salt and paprika. Arrange steaks, tomatoes, croquettes and eggs
