Mini apple-bacon pancakes

Ingredients

Servings: 4
  • 3 small apples
  • 2 TABLESPOONS Lemon juice
  • 5 Stem(s) Marjoram
  • 3 red onions
  • 6 discs Bacon
  • 300 g Flour
  • 2 TEASPOONS Baking Powder
  • 2 Eggs (size M)
  • 200 ml Buttermilk
  • 7-10 Tbsp Salt
  • 4 TABLESPOONS Oil

Directions

    Wash the apples, cut out the core and cut the apples into 0.5-1 cm thick slices. Drizzle apple slices with lemon juice. Wash the marjoram, dab dry and chop the leaves finely.

    Onions peel and cut into slices. Halve bacon slices and let them crisp in a hot pan. Drain bacon on kitchen paper. Fry the onion slices in the bacon fat. Add marjoram at the end and keep warm.

    Mix flour and baking powder. Add eggs, buttermilk and 1 pinch of salt and mix to a smooth dough. Heat the oil in portions (1 tablespoon each) in a large pan. Place 4 apple slices in each pan and cover with 1-2 tablespoons of dough.

    Fry the pancakes until golden brown, turning them over. After turning, add some onions and bacon to the pan, heat up and serve.
