Minced pies with pistachios

Ingredients

  • 4 Sheets of frozen puff pastry (450 g)
  • 1 Bread rolls from the previous day
  • 1 (approx. 75 g) thicker slice of cooked ham
  • 30 g Pistachio kernels
  • 3-4 small onions
  • 1 Garlic clove
  • 500 g mixed mince
  • 1 egg + 1 egg yolk (size M)
  • 7-10 Tbsp salt, white pepper
  • 2 TABLESPOONS Cognac or brandy
  • 7-10 Tbsp Flour
  • 5-7 TABLESPOONS Milk or cream
  • 500 g Mushrooms
  • 1 TABLESPOON butter/margarine
  • 1/2 TEASPOON dried thyme
  • 1/4 l Vegetable broth (instant)
  • 2-3 TABLESPOONS sauce thickener

    Defrost the dough. Soak the buns. Dice ham. Chop the pistachios. Peel and chop onions and garlic

    Knead minced meat, squeezed out bread roll, ham, garlic, pistachios, half onions, 1 egg, salt, pepper and cognac. Shape into 4 oval loaves. Puff pastry on flour to

    Roll out 4 rectangles (approx. 16 cm high, 26 cm wide). Place 1 chopped loaf upright in the middle, leaving a rim of approx. 10 cm on each side.

    Cut the edges of the dough approx. 8 times to the chopped loaf (possibly with the dough wheel). Press the upper and lower side first against the chopped loaf, place strips of dough on top in a grid pattern. Press the ends under the loaf. Place the pies on a baking tray lined with baking paper. Bake in a preheated oven (electric cooker: 225 °C/circulating air: 200 °C/gas: level 4) for approx. 40 minutes. Mix the egg yolks and 1 tbsp. milk. Spread the pies with the mixture after approx. 25 minutes, bake until done

    Clean, wash and slice the mushrooms. Fry them with the rest of the onions in hot fat. Add thyme. Deglaze with broth and 4-6 tablespoons of milk. Bring to the boil, thicken and season to taste. Serve with a fresh salad

    Meanwhile some butchers offer minced turkey on advance order. However, you can also grind the meat yourself, smaller quantities (without tendons) can even be minced in a universal mincer. Ready seasoned in the refrigerated section, you can get "turkey mix for roasting" (Wiesenhof)
