Mince pan with avocado and fried egg

Ingredients

Servings: 4
  • 2 Onions
  • 1 Garlic clove
  • 3 TABLESPOONS Olive oil
  • 600 g mixed minced meat
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 7-10 Tbsp Cumin
  • 4 TABLESPOONS Tomato paste
  • 1 TABLESPOON Flour
  • 1 can (425 ml) Chickpeas
  • 4 Eggs (size M)
  • 1 Avocado

Directions

    Peel and chop the onions and garlic. Heat 2 tablespoons of oil in a frying pan and fry the minced meat for about 10 minutes until crumbly. Season with salt, pepper and cumin. After about 5 minutes add onions and garlic.

    Stir in tomato paste, dust with flour and add 250 ml water while stirring. Bring to the boil and simmer for about 5 minutes. Pour the chickpeas into a sieve, rinse and add to the pan.

    In the meantime, heat 1 tablespoon of oil in a frying pan and fry the eggs in it for about 3 minutes to make fried eggs. Season with salt. Halve the avocado, remove the core, remove the flesh from the skin and cut into cubes. Arrange the mince pan with avocado and eggs.
