Cream fillet with summer vegetables

Ingredients

  • 2 TABLESPOONS flaked almonds
  • 1 large pork fillet (approx. 650 g)
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 6 discs (approx. 25 g each) Parma ham
  • 500 g small young potatoes (triplet type)
  • 300 g Courgette
  • 1 collar (approx. 150 g) Spring onions
  • 250 g cherry tomatoes
  • 7-8 stems Thyme
  • 2-3 TABLESPOONS Oil
  • 250 g Whipped cream
  • 2 TABLESPOONS medium hot mustard
  • 1/2-1 TEASPOON Sugar

Directions

    Roast the almonds in a pan without fat while turning, remove. Wash the meat, dab dry, season all around with salt and pepper and wrap ham tightly around the meat.

    Wash the potatoes thoroughly and cut in half or quarters depending on size. Clean, wash and cut the zucchini into pieces. Clean, wash and cut spring onions into rings, except for 1/2 spring onion for garnishing. Wash the tomatoes. Wash thyme, shake dry, put 2 stems aside, pluck leaves from the remaining stems.

    Heat the oil in a large, ovenproof pan and fry the potatoes thoroughly. Add the zucchini and spring onions and fry briefly. Season with salt and pepper. Add tomatoes and half of the thyme. Slide the vegetables on one side of the pan. Put the meat in the middle of the pan and fry it all around. Turn the vegetables as well.

    In the meantime mix cream and mustard. Season with salt, pepper and sugar. Leave the meat in the middle of the pan so that a separation is created. Pour mustard cream into the free side. Put the pan into the preheated oven (electric cooker: 225 °C/ convection oven: 200 °C/ gas: see manufacturer) and cook everything for about 15 minutes.

    Cut the spring onion into fine rings. Take the pan out of the oven, carefully lift the meat out, cut it into slices and put it back in. Sprinkle with almond flakes, thyme and spring onion. Garnish with thyme.
