Ingredients

  • 7-10 Tbsp Fat and flour
  • 125 g soft butter
  • 7-10 Tbsp Salt
  • 120 g Sugar
  • 4 TABLESPOONS Sugar
  • 6 Eggs (Gr. M)
  • 300 g Flour
  • 2 teaspoons, yesterday. Baking Powder
  • 1/4 liter (approx. 350 g) sweetened condensed milk (e.g. "milkmaid"; can)
  • 1/4 litre unsweetened coconut milk (can)
  • 1/4 litre Milk
  • 1 TABLESPOON Rum
  • 500 g frozen berry mixture
  • 150 ml Cherry nectar
  • 1 pck. Vanilla sauce powder
  • 2 TABLESPOONS Coconut flake
  • 250 g Whipped cream
  • 1 pck. Vanilla sugar
  • 7-10 Tbsp Aluminium foil
  • 7-10 Tbsp Wood skewer
  • 7-10 Tbsp Cling film

Directions

    The day before For the cake, wrap a square springform pan (24 cm) firmly in aluminium foil from the outside. Grease the tin and dust with flour. Cream butter, 1 pinch of salt and 120 g sugar. Stir in eggs one by one alternating with 1 level tablespoon of flour. Mix the rest flour and baking powder and stir in briefly. Spread the dough into the form. Bake in a hot oven (electric cooker: 175 °C/circulating air: 150 °C/gas: see manufacturer) for about 20 minutes. Let the cake cool down in the tin for 5-10 minutes.

    For the milk mixture bring condensed milk, coconut milk, milk and rum to the boil and simmer for about 5 minutes while stirring. Prick the cake with a wooden skewer. Pour the milk mixture bit by bit over the cake. Place the cake tin on a tray in case some milk mixture runs out. Cover with cling film and leave to stand overnight in a cool place.

    For the groats, bring frozen berries, nectar and 4 tablespoons of sugar to the boil in a pot. Stir about 5 tablespoons of cold water and sauce powder until smooth. Stir the sauce powder into the berries and simmer for about 1 minute. Let it cool down.

    The next day, roast grated coconut in a pan without fat. Remove. Whip cream and vanilla sugar until stiff. Remove the cake from the pan and cut into pieces. Serve with cream, berry groats and coconut flakes.

    At ease: The milk mix is very fast on the boil. So stir constantly so that nothing can burn or boil over.

    Stabbing: Prick the cake with a wooden skewer, close together, until it reaches the bottom of the mould. This allows the milk mix to be absorbed evenly.

    Pour it on: To make the torta tres leches thoroughly super-juicy, the milk mix and cake should be warm when you pour.

    Let it go: The icing will gradually seep into the cake. For this time cover the mould with foil so that it does not touch the cake. In this way no dough will stick to it when it is removed.
