  • 4 Passion Fruit
  • 530 g room-warm butter
  • 100 g Sugar
  • 2 TEASPOONS Lime juice
  • 4 Egg yolks (Gr. M)
  • 350 g Flour
  • 155 g Icing sugar
  • Two pck. Vanilla sugar
  • 1 pck. Pudding powder "Vanilla flavour" (for cooking)
  • 1 Organic Lime
  • 1 TEASPOON Baking Powder
  • 7-10 Tbsp Flour
  • baking paper

Directions

    Cut the passion fruit in half and extract the pulp with the help of a teaspoon. Melt 50 g butter, sugar, lime juice and passion fruit pulp in a small pot at low heat, stirring occasionally.

    Whisk the egg yolks and stir into the passion fruit and butter mixture. Bring to the boil while stirring constantly until the mixture becomes creamy. Let the passion fruit cream cool down.

    Knead 280 g butter, flour, 80 g icing sugar, vanillin sugar, custard powder, lime zest and baking powder with your hands to a smooth dough. Form 90 hazelnut-sized balls from the dough and spread them on 3 baking trays lined with baking paper. Press the balls flat with a floured fork. Bake in the preheated oven (electric cooker: 175 °C/ convection oven: 150 °C/ gas: see manufacturer) one after the other for approx. 8 minutes. Remove and let cool off.

    Whip 200 g butter with 75 g icing sugar until creamy white. Turn over all the biscuits. Spread the butter cream on one half of the biscuits and spread the passion fruit cream on the other half. Put one biscuit with passion fruit cream and one biscuit with butter cream together, each with the coated side. Let the biscuits set in a cool place.
