For the vinaigrette, whisk vinegar, salt, pepper, mustard and honey. Add oil drop by drop to the vinaigrette. Peel and finely dice the onion and stir into the vinaigrette.
Clean, wash and chop the peppers and tomatoes. Halve melon, remove seeds, cut melon into slices, cut flesh from skin and dice. Chop almonds. Wash parsley, shake dry, cut and chop leaves from the stalks. Dice cheese. Mix the prepared ingredients and serve.
