Medallions with beans in gorgonzola sauce

Ingredients

Servings: 4
  • 800 g green beans
  • 7-10 Tbsp Salt
  • 1/2 bunch Parsley
  • 4 Stem(s) fresh thyme
  • 1 medium onion
  • 50 g Butter
  • 30 g Flour
  • 1/4 l Vegetable broth (instant)
  • 1/4 l Milk
  • 100 g Gorgonzola cheese
  • 7-10 Tbsp Pepper
  • 2 (approx. 600 g) Pork fillets
  • 1 package (100 g/ 10-12 slices) Bacon
  • 2-3 TABLESPOONS Oil

Directions

    Wash the beans, clean them and break them once. Cover the beans and stew them for about 15 minutes in little boiling salted water. Wash parsley and thyme, dab dry and chop except for something to garnish. Finely chop the onion. Heat 30 g butter in a saucepan and sauté half of the onion cubes in it. Add flour and sauté briefly.

    Add stock and milk while stirring and add thyme. Bring to the boil and simmer for about 5 minutes. Stir from time to time. Stir the gorgonzola into the sauce, season with salt and pepper and set aside. Wash the pork fillets, dab dry and cut each fillet into 5-6 medallions. Wrap each medallion with a slice of bacon. Heat oil in a large frying pan and fry the medallions on each side for about 2 minutes. Season with salt and pepper and remove from the pan. Dissolve the roast with a little water and pour it into the gorgonzola sauce. Drain the beans. Heat 20 g butter in the pan and fry the remaining onion cubes in it.
