Meatloaf with chilli vegetables

Ingredients

Servings: 4
  • 4 Eggs (Gr. M)
  • 2 Bread rolls from the previous day
  • 2 large onions
  • 1 green and red pepper
  • 800 g mixed mince
  • 7-10 Tbsp salt, white pepper
  • 7-10 Tbsp Sweet peppers
  • 7-10 Tbsp Oil
  • 1 kg waxy potatoes
  • 1 can(s) (425 ml) Corn
  • 1 can(s) (425 ml) Kidney Beans
  • 1/2-1 chili pepper or 1/4-1/2 teaspoon chili powder
  • 2-3 Garlic cloves
  • 3-4 Tbsp clarified butter
  • 1 TABLESPOON Oil (e.g. olive oil)
  • 1 can(s) (850 ml) Tomatoes
  • 7-10 Tbsp Sugar
  • 7-10 Tbsp possibly parsley and 2 chillies to garnish

Directions

    Boil 2 eggs hard for about 10 minutes. Soak the rolls. Peel onions. Clean and wash the peppers. Dice both. Knead minced meat, squeezed out rolls, 2 eggs and half each of the onions and peppers. Season with salt, pepper and paprika

    Quench and peel the eggs. Flatten the minced meat into an oval plate. Put the eggs in the middle and cover with minced meat. Shape for frying. Place on an oiled fat pan or in a lightly oiled frying pan. Roast in a preheated oven (electric cooker: 175 °C/ convection oven: 150 °C / gas: level 2) for 60-70 minutes

    Peel, wash and slice the potatoes. Drain corn and beans on a sieve. Wash the chilli pepper, carve lengthwise, remove seeds and cut into rings. Peel garlic and cut into thin slices

    Heat clarified butter in a large frying pan. Fry the potatoes for 15-20 minutes, turning several times. Fry the garlic briefly at the end. Season with salt and pepper

    In the meantime, fry the remaining paprika and onion with the chilli pepper (add chilli powder only at the end) in the hot oil for about 5 minutes. Add corn and beans. Pour the juice on the tomatoes, chop them coarsely and bring to the boil. Stew everything for about 10 minutes. Add salt, sugar and possibly Chi

    Arrange the meatloaf with the vegetables. Garnish with parsley and chillies if desired. Add potatoes
