Meatballs with fried onions and béchmal potatoes

Ingredients

  • 2 Bread roll (from the previous day)
  • 1 Cauliflower
  • 3 medium-sized onions
  • 500 g mixed mince
  • 1 Egg (Gr. M)
  • 1 TABLESPOON Tomato paste
  • 1 TEASPOON medium hot mustard
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 7-10 Tbsp Sweet peppers
  • 7-10 Tbsp Nutmeg
  • 800 g Potatoes
  • 1-2 TABLESPOONS Oil
  • 2 str. tbsp. flour
  • 4 TABLESPOONS butter/margarine
  • 1⁄8 l Milk
  • 1⁄2 Beet Cress

Directions

    Soak 1 roll in water, grate the other roll finely into breadcrumbs. Clean and wash the cauliflower and divide it into florets. Peel the onions. Cut 2 onions into rings, dice the rest finely.

    Squeeze the buns. Knead with minced meat, egg, onion cubes, tomato paste and mustard. Season with salt, pepper and paprika. Form 8 meatballs from the minced meat mass with moistened hands.

    Peel and wash the potatoes, cover and cook in salted water for about 20 minutes. Cook cauliflower in boiling salted water for 10-15 minutes. Heat the oil in a large pan. Fry the meatballs for 5-6 minutes on each side.

    Mix 1 tablespoon of flour, 1⁄2 tsp paprika and 1 pinch of salt. Mix onion rings with it. Remove the meatballs from the pan and keep warm. Fry the onions in the frying fat for about 5 minutes until golden brown.

    Drain the cauliflower and collect the cooking water. Keep the cauliflower warm. For the béchamel sauce, heat 1 tablespoon of fat. Sauté 1 tbsp. flour in it. Stir in milk and 1⁄8 l cauliflower water, bring to the boil.

    Simmer the sauce for about 5 minutes. Season to taste with salt and nutmeg. Drain the potatoes and add them to the béchamel sauce.

    In a second pan heat 3 tablespoons of fat. Fry the breadcrumbs in it. Season with nutmeg and pour over the cauliflower. Cut cress from the bed and sprinkle over the potatoes. Arrange the meatballs with fried onions, potatoes and cauliflower.
