Wash the cucumbers, slice finely and sprinkle with salt. Leave to stand for about 20 minutes. In the meantime clean and wash spring onions and cut them into fine pieces. Wash lemon, grate peel, squeeze juice.
For the meatballs, knead the mince, spring onions, egg, oat flakes and lemon zest. Season to taste with salt, ginger and Sambal Oelek. Shape into small, longish meatballs. Shortly before serving, fry in hot oil while turning for about 8 minutes.
Mix 100 ml water, lemon juice and asia sauce. Pour over the salted cucumber slices. Peel pineapple, cut in half lengthwise and cut out the stalk. Cut flesh into fine pieces and add to the cucumber.
Arrange the meatballs and cucumber salad in portions. Serve garnished with cucumber slices shaped like butterflies and Asian garlic flowers.
